Catering students promise a right royal feast

FANS of the royal family will be able to dine like kings thanks to the efforts of catering students.

Three foundation degree catering students from Darlington College are promising a royal feast inspired by King Charles’ favourites and ingredients grown at Balmoral.

As part of their final major project Chloe Johnson, Katrina Billingsley and Angus Duncan were tasked with organising a food event.

So, since January, they have developed a £25-a-head King’s Coronation fine dining tasting menu, inspired by the Monarch, which will be hosted by the college’s Glasshouse restaurant on May 4, with sittings at 6pm, 6.45pm and 7.30pm.

Chloe, of Bainbridge, Wensleydale, said: “We were given free rein to organise an event and wanted to do something in honour of the new King. We are preparing for 45 covers so planning and organisation are key.”

Angus, of Richmond, said: “We have done so much research into King Charles’ favourite food and drink and will be serving cocktails on the terrace based on the whisky he likes and another paying tribute to the late Queen.

“We have based our produce on that grown at Balmoral, the King’s favourite place, and will be serving our twist on wild mushroom risotto, another dish he loves.”

Katrina, of Richmond, added: “It has been fascinating researching the royals and we have certainly learned a lot.”

Lecturer Dawn Cobb-Neate said: “They have put a great deal of effort into researching this regal banquet and I’m sure their efforts will be given the royal seal of approval by diners.”
